I hear people talking about levels of crit in pets, etc, but have NO idea how this is done.
Can someone please explain?

Critical is boost of str that occur more often with higher intimacy you can add crit to a pet by giving a magic crystal to nexo inf ront of bly city hall at lvl 30,50 and 70 max with a +1 +2 or +3 crystal max crit per crystal is 10/10 for a total of 30/30 max crit for nonm reborn pet.

can i undo the gems i've applied at this point? (+1 and +2) with or without SoC?

Yes SoC will reset your pet res and you will be able to add other res
